Curried Carrot and Split Pea Soup
Carrots are an excellent source of vitamin A, which is important for good vision.

In a large pot, heat some oil and sauté the onion and garlic until translucent.

Add the curry powder and cook for another minute.

Add the carrots, split peas, and vegetable stock. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the carrots and split peas are tender.

Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.

Stir in the coconut milk, lime juice, salt, and black pepper. Cook for another 5 minutes.

Serve hot, garnished with fresh cilantro.
