  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Peel and grate the cucuzza squash. Squeeze out any excess moisture.
  3. In a large bowl, combine the grated squash, flour, sugar, vegetable oil, eggs, vanilla extract, baking powder, cinnamon, and salt. Mix well until all ingredients are fully incorporated.
  4. Pour the batter into the prepared cake pan and smooth the top.
  5. Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
  7. Once the cake has cooled, dust it with powdered sugar before serving.
