Cuban Black Bean Soup
Cuban Black Bean Soup, also known as ‘Frijoles Negros’, is a staple dish in Cuban cuisine and is often served with rice.

Rinse and soak the black beans overnight. Drain and rinse again.

In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, diced red bell pepper, sliced carrot, and sliced celery stalks. Sauté until vegetables are tender.

Add cumin, smoked paprika, bay leaves, and soaked black beans to the pot. Stir well.

Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer for about 45 minutes or until the beans are tender.

Remove the bay leaves from the soup. Use an immersion blender to blend about half of the soup until smooth. Alternatively, transfer half of the soup to a blender and blend until smooth, then return it to the pot.

Stir in lime juice, salt, and black pepper. Simmer for another 5 minutes.

Serve the soup hot, garnished with chopped cilantro and sliced avocado.
