  2. Peel and grate the sweet potatoes.
  3. In a large bowl, combine the grated sweet potatoes, rolled oats, almond butter, maple syrup, cinnamon, and vanilla extract. Mix well.
  4. If desired, add chopped nuts to the mixture.
  5. Line a baking sheet with parchment paper.
  6. Scoop out about 2 tablespoons of the mixture and shape it into a small patty. Place it on the prepared baking sheet. Repeat with the remaining mixture.
  7. Bake for 20 minutes or until the edges are golden brown.
  8. Remove from the oven and let the oaties cool for 10 minutes.
