In a large bowl, combine okara, rice flour, almond flour, coconut sugar, baking powder, and salt.

Add coconut oil, vanilla extract, and almond milk to the dry ingredients. Mix well until a dough forms.

Fold in dark chocolate chips and chopped nuts (if using).

Shape the dough into small balls and place them on a baking sheet lined with parchment paper.

Flatten each ball with the back of a fork to create a crisscross pattern.
