Preheat the oven to 325°F (163°C).

In a large bowl, combine rolled oats, almonds, cashews, pumpkin seeds, and sunflower seeds.

In a small saucepan, melt coconut oil over low heat. Stir in honey and vanilla extract.

Pour the honey mixture over the dry ingredients and mix well until everything is coated.

Spread the mixture evenly on a baking sheet and bake for 20-25 minutes, stirring halfway through, until golden brown.

Remove from the oven and let it cool completely.

Once cooled, add dried cranberries and dried apricots.

Store in an airtight container and enjoy with yogurt or milk for breakfast.
