  3. In a large pot, heat some oil and sauté the garlic and ginger for a minute.
  4. Add the red curry paste and cook for another minute.
  5. Add the sweet potatoes, lentils, coconut milk, and vegetable broth to the pot.
  6. Bring to a boil, then reduce the heat and simmer for about 20 minutes or until the sweet potatoes and lentils are tender.
  7. Squeeze the lime juice into the pot and stir.
  8. Season with salt and black pepper.
  9. Serve hot, garnished with fresh cilantro.
