Heat olive oil in a large pot over medium heat. Add onion, garlic, celery, and potatoes. Cook for 5 minutes, stirring occasionally.

Add vegetable stock, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, or until vegetables are tender.

Remove thyme sprigs and bay leaf. Use an immersion blender to puree the soup until smooth.
