Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic cloves, and sauté until fragrant.

Add sliced carrots, diced potato, broccoli florets, and cauliflower florets to the pot. Stir and cook for a few minutes.

Pour in vegetable broth and bring to a boil. Reduce heat and simmer for about 20 minutes, or until the vegetables are tender.

Remove the pot from heat and let it cool slightly. Use an immersion blender to puree the soup until smooth.

Return the pot to low heat and stir in coconut milk. Season with salt and black pepper to taste.

Cook for an additional 5 minutes, allowing the flavors to blend together.
