In a large pot, bring water to a boil and cook the corn for 5 minutes. Drain and let it cool.

In a bowl, combine the red bell pepper, green bell pepper, red onion, white vinegar, sugar, salt, black pepper, cayenne pepper, cilantro, and lime juice.

Cut the corn kernels off the cob and add them to the bowl. Mix well.

Cover the bowl and let the relish rest in the refrigerator for at least 30 minutes.
