Preheat the oven to 350°F (175°C). In a large bowl, mix together oats, almond flour, baking powder, salt, and chia seeds. In a separate bowl, whisk together melted coconut oil, maple syrup, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix well. Fold in the dark chocolate chips. Scoop tablespoon-sized portions of the dough onto a baking sheet lined with parchment paper. Flatten each cookie slightly with the back of a spoon. Bake for 10-12 minutes or until golden brown. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
