Add the olive oil, thyme sprigs, bay leaves, black peppercorns, and sea salt.

Cover the dish with aluminum foil.

Bake in the preheated oven for 1 hour.

Remove the foil and continue baking for another 1-2 hours, until the garlic cloves are soft and golden.

Remove from the oven and let it cool for 2 hours.

Transfer the confit of garlic to a sterilized jar and cover with olive oil.
