Confetti Rice
Confetti Rice gets its name from the colorful mixed vegetables that resemble confetti when cooked with rice.
This is vegan and gluten free recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Cook the basmati rice according to package instructions. Set aside.

Heat sesame oil in a large pan or wok over medium heat. Add chopped onion and minced garlic. Sauté until onion becomes translucent.

Add mixed vegetables and stir-fry for 5 minutes, or until they are cooked but still crisp.

Push the vegetables to one side of the pan and add the cooked rice to the other side. Pour soy sauce over the rice and mix well.

Season with salt and black pepper. Stir-fry for another 3-4 minutes, until the rice is heated through.

Garnish with chopped green onions and cilantro.

Remove from heat and let it rest for 5 minutes before serving.
