Coconut washboards are a popular vegan and gluten-free alternative to traditional cookies. They get their name from their rectangular shape, which resembles an old-fashioned washboard used for laundry.

Preheat the oven to 350°F (175°C).

In a large bowl, mix together the coconut flakes, almond flour, maple syrup, coconut oil, vanilla extract, and salt.

Line a baking sheet with parchment paper.

Take a tablespoon of the mixture and shape it into a rectangular bar on the baking sheet.

Repeat with the remaining mixture, leaving some space between the bars.

Bake for 12-15 minutes, or until the edges are golden brown.

Remove from the oven and let cool completely on the baking sheet.

Once cooled, the coconut washboards are ready to serve.
