In a saucepan, combine coconut milk, maple syrup, coconut oil, cocoa powder, instant coffee, and vanilla extract. Stir well.

Place the saucepan over medium heat and bring the mixture to a boil. Reduce the heat to low and simmer for 5 minutes, stirring continuously.

Remove the saucepan from heat and let it cool for 10 minutes.

Stir in shredded coconut.

Line a square baking dish with parchment paper and pour the fudge mixture into the dish. Smooth the top with a spatula.

Place the dish in the refrigerator and let it set for at least 2 hours.

Once set, remove the fudge from the dish and cut into squares.
