  1. Preheat the oven to 325°F (160°C).
  2. In a large bowl, combine rolled oats, shredded coconut, almonds, cashews, pumpkin seeds, and chia seeds.
  3. In a small saucepan, melt coconut oil. Stir in maple syrup and vanilla extract.
  4. Pour the liquid mixture over the dry ingredients and toss until well coated.
  5. Spread the mixture evenly on a baking sheet.
  6. Bake for 20-25 minutes, stirring halfway through, until golden brown.
  7. Remove from the oven and let it cool completely.
  8. Once cooled, stir in dried cranberries.
  9. Store in an airtight container.
