Rinse the basmati rice under cold water until the water runs clear.

In a large saucepan, heat some oil and add cumin seeds, cardamom pods, and cinnamon stick. Sauté for a minute.

Add chopped onion, minced garlic, and grated ginger. Cook until the onion turns golden brown.

Add turmeric powder and sauté for a few seconds.

Add the rinsed basmati rice to the pan and stir well to coat the rice with the spices.

Pour in coconut milk and water. Add salt and give it a good stir.

Bring the mixture to a boil, then reduce the heat to low and cover the pan. Let it simmer for about 15 minutes or until the rice is cooked and all the liquid is absorbed.

In a separate pan, lightly toast the cashews and raisins.

Once the rice is cooked, remove it from the heat and let it rest for 5 minutes.

Fluff the rice with a fork and garnish with toasted cashews, raisins, and fresh cilantro.
