In a saucepan, bring 3 cups of water to a boil. Add the wheat berries and cinnamon sticks. Reduce heat, cover, and simmer for 45 minutes or until the wheat berries are tender.

While the wheat berries are cooking, dice the red onion, cucumber, cherry tomatoes, and chop the fresh parsley.

Drain the cooked wheat berries and discard the cinnamon sticks. Transfer the wheat berries to a large bowl.

Add the diced red onion, cucumber, cherry tomatoes, and fresh parsley to the bowl with the wheat berries.

In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper. Pour the dressing over the salad and toss to combine.

Allow the salad to rest for 30 minutes to let the flavors meld together.

Serve the cinnamon-soaked wheat berry salad chilled or at room temperature.
