  4. Add the diced red onion, cucumber, cherry tomatoes, and fresh parsley to the bowl with the wheat berries.
  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper. Pour the dressing over the salad and toss to combine.
