Cut the tofu into small cubes. Heat vegetable oil in a pan and fry the tofu until golden brown. Remove and set aside. In the same pan, add ground pork and cook until browned. Add minced garlic, ginger, and chopped scallions. Stir-fry for a minute. Add chili bean paste and soy sauce. Stir-fry for another minute. In a separate bowl, dissolve cornstarch in water. Add the cornstarch mixture to the pan and stir well. Return the fried tofu to the pan. Stir gently to coat the tofu with the sauce. Season with salt, sugar, and sesame oil. Stir well. Simmer for a few minutes until the sauce thickens. Serve hot with steamed rice.
