Peel and chop the carrots, onion, and garlic.

Heat olive oil in a large pot and sauté the onion and garlic until softened.

Add the carrots and vegetable broth to the pot and bring to a boil. Reduce heat and simmer until the carrots are tender.

Remove from heat and let the mixture cool slightly.

Transfer the mixture to a blender and blend until smooth.

Stir in lemon juice, cilantro, salt, and black pepper.

Refrigerate for at least 30 minutes to chill.
