  1. Rinse and drain the chickpeas.
  2. In a large bowl, mash the chickpeas with a fork or potato masher.
  3. Finely chop the red onion, celery stalks, red bell pepper, and fresh parsley.
  4. Add the chopped vegetables to the mashed chickpeas.
  5. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and black pepper.
  6. Pour the dressing over the chickpea mixture and stir well to combine.
  7. Toast the whole wheat bread slices.
  8. Place a lettuce leaf on each slice of bread.
  9. Spoon the chickpea salad onto the lettuce leaves.
  10. Top with another slice of bread to make a sandwich.
