Chickpea and Spinach Stew

Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic. Cook until onion becomes translucent.

Add paprika, cumin, salt, and pepper. Stir well.

Add chopped tomatoes and vegetable broth. Bring to a simmer.

Drain and rinse the chickpeas. Add them to the pot.

Cover the pot and let it simmer for 15 minutes.

Stir in the spinach and cook until wilted.

Remove from heat and let it rest for 10 minutes.
