  1. Rinse the dried lima beans and soak them in water overnight.
  2. Drain the soaked beans and transfer them to a slow cooker.
  3. Add vegetable broth, chopped onion, minced garlic, sliced carrots, sliced celery, bay leaf, thyme, rosemary, salt, and black pepper to the slow cooker.
  4. Cover the slow cooker and cook on low heat for 4 hours.
  5. After 4 hours, stir in lemon juice and fresh parsley.
  6. Cover and cook for an additional 10 minutes.
  7. Serve hot and enjoy!
