Preheat the oven to 400°F (200°C). Cut the cauliflower into 1-inch thick slices to make steaks.

In a small bowl, mix olive oil, salt, and black pepper. Brush the mixture on both sides of the cauliflower steaks.

Place the cauliflower steaks on a baking sheet and roast in the oven for 20 minutes, flipping halfway through.

While the cauliflower is roasting, thread the mushrooms and garlic cloves onto the skewers.

Heat a grill pan over medium heat and grill the skewers for 5 minutes, turning occasionally.

In a blender, combine almond milk, parsley, lemon juice, and nutritional yeast. Blend until smooth to make the cauliflower puree.

Serve the roasted cauliflower steaks with the mushroom and garlic skewers, drizzle with the cauliflower puree, and sprinkle with fresh parsley.
