Preheat the oven to 400°F (200°C).

Peel and trim the carrots, then cut them into thick diagonal slices.

Place the carrots on a baking sheet and drizzle with olive oil. Season with salt, black pepper, and fresh thyme. Toss to coat evenly.

Roast the carrots in the preheated oven for 15-20 minutes, or until they are tender and slightly caramelized.

While the carrots are roasting, prepare the grape and port glaze. In a small saucepan, combine the grapes, port wine, and maple syrup. Bring to a simmer over medium heat and cook for 5 minutes, or until the grapes are soft and the liquid has reduced slightly.

Remove the roasted carrots from the oven and transfer them to a serving dish. Pour the grape and port glaze over the carrots, tossing gently to coat.
