Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until softened.

Add carrots, thyme, salt, and black pepper. Stir well.

Pour in vegetable stock and bring to a boil. Reduce heat and simmer for 20 minutes or until carrots are tender.

Remove from heat and let it cool slightly.

Using a blender, puree the soup until smooth.

Return the soup to the pot and stir in coconut milk.

Heat the soup over low heat until warmed through.
