Peel and chop the carrots and onion.

In a large pot, add the vegetable broth, carrots, onion, and star anise. Bring to a boil and let it simmer for 20 minutes or until the carrots are tender.

Remove the star anise and blend the soup until smooth using an immersion blender or a regular blender.

Return the soup to the pot and stir in the coconut milk, lime juice, salt, and black pepper. Heat the soup over medium heat until warmed through.
