Carrot Rice with Peanuts
Carrots are a rich source of beta-carotene, which is converted into vitamin A in the body and helps improve vision.
This is vegan and gluten free recipe. Dish can be prepared in 35 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 15.

Wash and soak the basmati rice for 30 minutes.

Heat oil in a pan and add the peanuts. Roast them until they turn golden brown. Remove and set aside.

In the same pan, add chopped onions and sauté until golden brown.

Add minced garlic and ginger. Sauté for a minute.

Add grated carrots and cook for 2-3 minutes.

Drain the soaked rice and add it to the pan. Mix well.

Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix everything together.

Add water and bring it to a boil.

Reduce the heat, cover the pan, and let it simmer for 15-20 minutes or until the rice is cooked.

Fluff the rice with a fork and garnish with chopped cilantro.

Serve hot with lemon wedges.
