Instructions

  1. Julienne the carrots, bell peppers, and onion.
  2. Cook the rice noodles according to package instructions.
  3. Heat sesame oil in a large pan or wok over medium heat.
  4. Add garlic and ginger, and sauté for 1 minute.
  5. Add the julienned vegetables and stir-fry for 3-4 minutes.
  6. Add cooked rice noodles, soy sauce, and lime juice. Stir-fry for another 2 minutes.
  7. Garnish with green onions, cilantro, and crushed peanuts.
  8. Serve hot and enjoy!
