Preheat the oven to 180°C (350°F) and grease a loaf pan.

In a large bowl, mix together the grated carrots, flour, brown sugar, vegetable oil, eggs, vanilla extract, baking powder, cinnamon, and salt.

Fold in the chopped walnuts.

Pour the batter into the prepared loaf pan.

Bake for 50 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes.

Transfer the carrot bread to a wire rack and let it cool completely before slicing.
