  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, mix together the carrots, almond flour, coconut flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, beat the eggs. Add the coconut oil, honey, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients. Stir until well combined.
  5. Fold in the walnuts and raisins.
  6. Transfer the mixture to the greased baking dish and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let cool in the baking dish for 10 minutes.
  9. Transfer to a wire rack and let cool completely.
  10. Cut into bars and serve.
