Preheat the oven to 350°F (175°C). Grease a loaf pan.

Grate the zucchini and squeeze out the excess moisture.

In a large bowl, combine the zucchini, carob powder, almond flour, gluten-free flour blend, baking powder, cinnamon, salt, walnuts, maple syrup, coconut oil, and vanilla extract. Mix well.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 50 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
