Caribbean/Mexican Style Stove Top Refried Beans
Refried beans are a staple in Mexican and Caribbean cuisine. Contrary to their name, they are not actually fried twice. The term ‘refried’ comes from the Spanish word ‘refritos,’ which means ‘well-fried.’ The beans are cooked, mashed, and then sautéed in oil or fat to develop their rich flavor and creamy texture.

Rinse the pinto beans under cold water and drain.

In a large pot, heat the vegetable oil over medium heat.

Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent.

Add the pinto beans, ground cumin, chili powder, and salt to the pot. Stir well to coat the beans with the spices.

Pour in the water and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes.

Remove the lid and continue cooking for another 10 minutes, stirring occasionally, until the beans are soft.

Mash the beans using a potato masher or the back of a spoon until they reach your desired consistency.

Stir in the lime juice and chopped cilantro.

Let the refried beans rest for 5 minutes before serving.

Serve hot as a side dish or as a filling for tacos, burritos, or quesadillas.
