Heat oil in a pan and sauté the onions until caramelized.

Add corn and cook for another 5 minutes.

In a bowl, combine the caramelized onion and corn mixture with lime juice, cilantro, jalapeno, salt, and pepper.

Mix well and refrigerate for at least 30 minutes.
