Preheat the grill or oven to medium-high heat.

Cut the eggplant in half lengthwise and score the flesh with a knife.

Brush the eggplant with olive oil and sprinkle with salt.

Grill or roast the eggplant for about 20 minutes, or until the flesh is soft and the skin is charred.

Remove the eggplant from the grill or oven and let it cool for a few minutes.

Scoop out the flesh of the eggplant and transfer it to a bowl.

In a skillet, heat olive oil over medium heat.

Add the kimchi and cook until caramelized, about 5 minutes.

In a food processor, combine the caramelized kimchi, eggplant flesh, tahini, lemon juice, garlic, cumin, salt, and sugar.

Process until smooth and creamy.

Transfer the baba ghanoush to a serving dish and garnish with parsley and sesame seeds.
