  1. Cut the eggplant into cubes and sprinkle with salt. Let it sit for 10 minutes.
  2. Rinse the eggplant cubes to remove excess salt and pat dry.
  3. Heat olive oil in a large pan over medium heat. Add the eggplant cubes and fry until golden brown. Remove and set aside.
  4. In the same pan, add more olive oil if needed and sauté the onion and celery until softened.
  5. Add the tomatoes, olives, capers, red wine vinegar, sugar, salt, and black pepper. Stir well.
  6. Simmer the mixture for 20 minutes, stirring occasionally.
  7. Add the fried eggplant cubes back into the pan and cook for another 10 minutes.
  8. Remove from heat and let it rest for 10 minutes.
  9. Garnish with fresh basil leaves before serving.
