  1. Preheat the oven to 250°F (120°C). Line a baking sheet with parchment paper.
  2. Pop the popcorn kernels according to the package instructions.
  3. In a medium saucepan, combine the sugar, butter, corn syrup, vanilla extract, and salt. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  4. Remove from heat and stir in the baking soda until well combined. The mixture will become foamy.
  5. Pour the caramel mixture over the popcorn and toss until all the popcorn is coated.
  6. Spread the coated popcorn onto the prepared baking sheet.
  7. Bake for 45 minutes, stirring every 15 minutes.
  8. Remove from the oven and let cool completely before serving.
