Preheat the oven to 325°F (163°C).

In a large mixing bowl, combine the rolled oats, almonds, pumpkin seeds, sunflower seeds, coconut flakes, honey, coconut oil, vanilla extract, and cinnamon. Mix well to ensure everything is evenly coated.

Spread the mixture onto a baking sheet lined with parchment paper.

Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and crisp.

Remove from the oven and let it cool completely.

Once cooled, stir in the dried cranberries.

Store in an airtight container for up to 2 weeks.
