Preheat the oven to 425°F (220°C). Cut the cauliflower into florets.

Toss the cauliflower florets with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 20 minutes until golden brown.

In a large skillet, heat olive oil over medium heat. Add onion, garlic, and ginger. Sauté until the onion is translucent.

Add curry powder, turmeric powder, cumin powder, and coriander powder. Cook for 1 minute.

Stir in tomato paste and coconut milk. Simmer for 5 minutes.

Add the roasted cauliflower to the skillet and stir to coat with the curry sauce. Cook for an additional 5 minutes.

Remove from heat and stir in lemon juice.
