  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Add potatoes and vegetable broth, bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Meanwhile, wash and thinly slice the collard greens.
  4. Once the potatoes are cooked, use an immersion blender to puree the soup until smooth.
  5. Add the collard greens to the pot and cook for an additional 5 minutes.
  6. Season with salt and pepper.
  7. If desired, add sliced chorizo sausage and cook for another 5 minutes.
  8. Serve hot and enjoy!
