Butter beans are also known as lima beans and are a good source of protein and fiber.

Heat olive oil in a large pot over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are tender.

Add butter beans, vegetable broth, dried thyme, bay leaf, salt, and black pepper. Bring to a boil.

Reduce heat and simmer for 20 minutes.

Remove bay leaf and blend the soup until smooth using an immersion blender or a regular blender.

Return the soup to the pot and stir in lemon juice.

Cook for an additional 5 minutes.

Serve hot, garnished with fresh parsley.
