In a saucepan, bring 2 cups of water to a boil. Add the bulgur wheat and simmer for 10 minutes until tender. Drain any excess water.

In a large skillet, heat olive oil over medium heat. Add the garlic, red onion, and bell peppers. Sauté for 5 minutes until the vegetables are tender.

Add the corn kernels, cherry tomatoes, cooked bulgur wheat, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.

Remove from heat and stir in lemon juice and fresh parsley.
