Add the bulgur and vegetable broth. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes or until the bulgur is tender and the liquid is absorbed.

Remove from heat and let it rest for 5 minutes.

Fluff the bulgur pilaf with a fork and stir in the parsley and lemon juice.
