Rinse the lentils and set aside.

In a large pot, heat the olive oil over medium heat.

Add the onion and garlic, and sauté until translucent.

Add the carrots, potatoes, and tomato, and cook for 5 minutes.

Add the lentils, vegetable broth, bay leaf, paprika, cumin, salt, and black pepper.

Bring to a boil, then reduce heat to low and simmer for 25 minutes, or until the lentils are tender.

Remove the bay leaf and stir in the fresh parsley and lemon juice.

Let the soup rest for 10 minutes before serving.
