Buckwheat is not actually a grain but a seed, making it a great gluten-free alternative for pancakes.

In a large bowl, whisk together buckwheat flour, all-purpose flour, baking powder, and salt.

In a separate bowl, mix maple syrup, soy milk, water, and vegetable oil.

Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.

Heat a non-stick pan over medium heat and lightly grease with oil.

Pour 1/4 cup of batter onto the pan for each pancake and cook until bubbles form on the surface.
