In a large bowl, mix buckwheat flour, water, salt, and olive oil to make a smooth batter.

Let the batter rest for 30 minutes.

In a separate pan, sauté mushrooms, spinach, onion, and garlic until cooked.

Heat a non-stick pan and pour a ladleful of batter.

Spread the batter evenly to make a thin galette.

Cook until the edges turn golden brown.

Flip the galette and cook the other side.

Repeat with the remaining batter.
