Trim the leeks and cut them into 2-inch pieces.

Heat olive oil in a large skillet over medium heat.

Add the leeks and garlic to the skillet and sauté for 5 minutes.

Pour in the vegetable broth and season with salt and black pepper.

Bring to a boil, then reduce the heat to low and cover the skillet.

Simmer for 20 minutes until the leeks are tender.

Remove the lid and cook for an additional 5 minutes to reduce the liquid.

Sprinkle with fresh parsley before serving.
