African Curried Chickpea Stew

Heat oil in a large pot over medium heat. Add onions, garlic, and ginger. Cook until onions are translucent.

Add curry powder and tomato paste. Stir well.

Add chickpeas, coconut milk, and vegetable broth. Bring to a boil.

Reduce heat and simmer for 15 minutes.

Add carrots and potatoes. Cook for another 10 minutes or until vegetables are tender.

Stir in spinach, lime juice, salt, and black pepper. Cook for 2 more minutes.

Remove from heat and let it rest for 5 minutes.

Serve hot with rice or bread.
