Trim off the root and dark green parts of the leeks. Cut the remaining white and light green parts into 2-inch long pieces.

Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant.

Add the leeks to the skillet, arranging them in a single layer. Cook for about 5 minutes, until they start to brown.

Pour vegetable broth into the skillet and add thyme, salt, and black pepper. Bring to a simmer.

Reduce the heat to low, cover the skillet, and let the leeks braise for about 20 minutes, until they are tender.

Remove the lid and increase the heat to medium-high. Cook for another 5 minutes, until the liquid has evaporated and the leeks are caramelized.
