Peel and dice the potatoes.

Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.

Add chopped onion and sauté until golden brown.

Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.

Add diced potatoes and coat them with the spice mixture.

Cover and cook on medium heat for about 20 minutes or until the potatoes are tender, stirring occasionally.
